Aebleskiver

Aebleskiver, also called "Pancake Puffs", is a Danish dessert, similar to doughnut holes but sweeter and traditionally served with glögg (mulled wine) during the Advent.

They're very good topped with jam and served hot for breakfast, too.

The texture is rather similar to American waffles. They are cooked on the stove top in a cast iron pan that resembles an egg poacher. You can find aebleskiver pans at Ikea, Amazon, WalMart and many other places at a very affordable price, but do be forewarned that these can become a delicious habit very quickly.


INGREDIENTS:

  • 2 egg whites
  • 2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 4 T. butter, melted
  • 2 C all-purpose flour
  • 1 T. granulated sugar
  • 1/2 tsp. salt
  • 2 C buttermilk
  • 1 C vegetable oil for frying

DIRECTIONS:

Beat the egg whites until stiff and set aside.

Mix together the flour, baking powder, salt, baking soda, sugar; add melted butter and buttermilk and beat until smooth. Gently fold in the egg whites last.

Put about 1 tablespoon of vegetable oil in the bottom of each aebleskiver pan cup and heat on the stove top over medium-high until hot. Pour in about 2 tablespoons of the batter into each cup. As soon as they get bubbly around the edge, turn them quickly (Danish cooks use a long knitting needle, but a fork or chopstick will work). Continue cooking, turning the ball to keep it from burning, until they are nicely golden brown . Serve hot with syrup, jam or powdered sugar.
