 Futari: African Squash & Yams

This is a bright dish both visually and in your mouth. The gently simmered squash and yams are flavored with coconut milk, cinnamon and cloves. The kids think it's dessert in the middle of dinner(!) and the best thing is that it only takes about 30 minutes to prepare.

INGREDIENTS:

  • 1 sm Onion, cut into 1-inch pieces
  • 1 Cup Coconut Milk
  • 1/2 tsp Salt
  • 2 medium size yams or sweet potatoes
  • 2 Tbsp Oil
  • 1 lb Hubbard or Acorn squash, pared and cut into 1-inch pieces
  • 1/2 tsp Ground cinnamon
  • 1/4 tsp Ground cloves

DIRECTIONS:

Heat oil in 10-inch skillet over medium heat. Stir in onion and saute until tender. Stir in remaining ingredients. Heat to boiling. Reduce heat. Cover and simmer on low heat 10 minutes. Remove cover and simmer, stirring occasionally, until vegetables are tender, about 5 minutes longer.

Makes 6 to 8 servings
