Recipes ranging from refreshing cocktails to aromatic entrees and tantalizing deserts speak to the various Anantara Vacation Club properties, incorporating cultural elements of what one might expect when visiting the region. To kick off “A Taste of Anantara Vacation Club at home,” Anantara Vacation Club Phuket Mai Khao’s mixologist, Marut Chima, and Senior Sous Chef, Chef Boonson Pilong, have shared two of their favorite recipes – the Sodchuan Cocktail and the spicy green curry coconut dish, Gaeng Kiew Waan Gai, as each complement and balance the other.
With more than 10 years of experience in mixology at luxury resorts, Marut Chima’s latest creation and the club’s signature cocktail, Sodchuan, is a refreshing libation made from Vodka infused traditional Thai herbs such as kaffir, lime and lemongrass topped with soda. It is the perfect mix to go along with the tropical Thailand atmosphere and Chef Bonsoon’s Gaeng Kiew Waan Gai. Chef Bonsoon, an expert in European and Thai cuisine, is known to combine the two styles in his culinary creations. For this signature dish, Chef Bonsoon hones in on the green curry sauce, a Central Thai variety of curry. Kaeng khiao wan, literally sweet green curry, derives its name from the color of the dish, which comes from green chillies. The “sweet” in the Thai name, wan, refers to the particular color green itself and not to the taste of the curry. As this is a Thai curry based on coconut milk and fresh green chilies, the color comes out creamy mild green or, and this color is called in Thai, “sweet green.” The ingredients in the dish include eggplant (both small purple and chao phaya), sweet basil, coconut cream, large red chilies, palm sugar, fish sauce and white soya sauce.
Additional recipes will include Tom Yum Goong (hot & sour spicey prawn soup), Andaman Seafood Salad with lemongrass poached seafood, glass noodles, coriander, muddled chilies and lime, Pisang Goreng (banana fritters) and Mini Chicken Satay with Peanut sauce for kids, among others.
