Easy Candied Yams Casserole
Some people love candied yams, some people hate
them. For those who don't find it a tasty dish I say thank you; that means more for me!
- 2 (No. 2 1/2) cans (29 oz.) yams
- 1 C sugar
- 2 tsp. vanilla
- 1/2 C melted butter
- 2 eggs
- 1 tsp. orange peel, grated
Drain yams except for small amount of syrup. Mash.
Beat all ingredients together until well mixed, then put into a large casserole dish.
TOPPING: 1/2 C. melted butter, 1 cup pecans or walnuts, chopped fine, 1/3 cup self rising flour,
1 C. light brown sugar. Mix all up then crumble over top of yams. Bake 30 minutes at 350 degrees.
